  • 3 tbsp (38 g) granulated white sugar
  • 1 3/4 cups (218 g) all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 6 oz (170 g) cream cheese, cold
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 2 tbsp (30 ml) apple cider reduction from above
  • 1/4 cup (50 g) granulated white sugar for topping
  • 1/4 tsp ground cinnamon for topping
  • 1/8 tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp (1428 g) salted butter, melted for topping

Instructions

  1. Prepare an apple cider reduction by simmering 2 cups of apple cider until it reduces to about 2 tablespoons.
  2. In a bowl, mix cold cream cheese with egg yolks and vanilla until smooth.
  3. Whisk together flour, cinnamon, nutmeg, allspice, baking powder, baking soda, and salt in another bowl.
  4. Beat softened butter with light brown and granulated sugars until fluffy; add the apple cider reduction and vanilla extract.
  5. Gradually mix in the dry ingredients until just combined.
  6. Scoop dough onto baking sheets, creating indentations for the cheesecake filling.
  7. Fill each indentation with the cheesecake mixture.
  8. Bake at 350°F (175°C) for about 11 minutes until edges are golden.
  9. Brush warm cookies with melted butter and sprinkle spiced sugar on top.
