  • 3 tbsp granulated sugar
  • 1 3/4 cups all-purpose flour
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 6 oz cream cheese, cold
  • 2 tbsp apple cider reduction
  • 1/4 cup granulated sugar for topping
  • 1/4 tsp ground cinnamon for topping
  • 1/8 tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp salted butter, melted for topping

Instructions

  1. Prepare the apple cider reduction by boiling it in a saucepan until it reduces to about 1 cup (20-30 minutes). Let cool.
  2. For the cheesecake filling, blend cold cream cheese with sugar and vanilla until smooth; set aside.
  3. In a bowl, whisk together flour, cinnamon, nutmeg, allspice, baking powder, baking soda, and salt. In another bowl, cream softened butter with sugars until fluffy. Incorporate egg yolks and cooled apple cider reduction, then mix in dry ingredients.
  4. Preheat oven to 350°F (175°C). Scoop dough into your hand, flatten slightly, place cheesecake filling in the center, fold dough around it, and roll into a ball.
  5. Bake on parchment-lined sheets for about 11 minutes or until lightly golden. Brush with melted butter and sprinkle spiced sugar topping immediately after baking.
