  • ½ cup butter (room temperature)
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 tablespoon apple pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup melted butter (for topping)
  • ½ cup sugar (for topping)
  • 1 tablespoon cinnamon (for topping)

Instructions

  1. Reduce the apple cider in a saucepan over medium heat until halved (20-30 minutes). Cool.
  2. Preheat your oven to 350°F (175°C) and grease a 9×5 loaf pan.
  3. Cream together butter and brown sugar until fluffy.
  4. Mix in egg and vanilla until well combined.
  5. Gradually add flour, apple pie spice, baking powder, baking soda, salt, and reduced cider; stir until just combined.
  6. Pour batter into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 15 minutes before transferring to a cooling rack.
  8. Brush with melted butter and sprinkle with cinnamon-sugar topping.
