  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F and prepare a 9” square baking dish by buttering it and lining with parchment paper.
  2. In a large sauté pan, boil the fresh apple cider until reduced by half (about 5 minutes). Remove from heat and whisk in diced cold butter until melted.
  3. In a medium mixing bowl, combine eggs, granulated sugar, brown sugar, light olive oil, sour cream, baking powder, baking soda, ground cinnamon, allspice, and salt. Whisk until smooth.
  4. Gradually add the reduced cider mixture to the wet ingredients and mix well.
  5. Gently fold in all-purpose flour until just combined—do not overmix.
  6. Pour the batter into the prepared baking dish and bake for 22–25 minutes or until golden brown and puffed.
  7. Allow to cool slightly before topping with cool room temperature butter followed by a generous sprinkle of cinnamon-sugar mixture.
