  • ½ cup unsalted butter, at room temperature
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cream of tartar, ground cinnamon, and salt.
  3. In a separate large bowl, use an electric mixer to cream the room temperature butter with granulated and brown sugars until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, beating until combined.
  5. Gradually mix in the dry ingredients until just combined. Fold in the chopped apple pieces gently.
  6. Roll tablespoon-sized portions of dough into balls and coat them in a mixture of granulated sugar and ground cinnamon.
  7. Place the coated dough balls on the prepared baking sheet about 2 inches apart.
  8. Bake for 8–10 minutes or until edges are golden brown. Allow cooling before transferring to a wire rack.
