  • 4 large russet potatoes (or 5 large red potatoes)
  • 1 cup mayonnaise
  • 2 tablespoons red apple vinegar
  • 1 teaspoon sugar
  • 1 red bell pepper
  • 1 cup julienned carrots (or 2 whole carrots)
  • 1 stalk celery
  • ½ cup white onion
  • Fresh chives and parsley

Instructions

  1. Wash and boil the potatoes in salted water until fork-tender (about 15 minutes). Drain and cool before peeling.
  2. While cooling, chop vegetables: dice onion, julienne bell pepper and carrots, and dice celery.
  3. In a mixing bowl, whisk together mayonnaise, red apple vinegar, sugar, and salt until smooth.
  4. Chop cooled potatoes into desired size and combine with diced vegetables in a large mixing bowl.
  5. Pour dressing over the potato mixture and mix gently to coat evenly.
  6. Garnish with minced chives and parsley. Chill for at least one hour before serving.
