  • 6 tablespoons (85 g) unsalted butter
  • ½ cup (100 g) granulated sugar
  • 4 ½5 cups (540600 g) all-purpose flour (spooned and leveled)
  • 2 ¼ teaspoons instant yeast
  • 1½ teaspoons salt
  • ½ cup mashed banana (about 1 large banana)
  • For the Filling: 4 tablespoons (1/2 stick, 57 g) unsalted butter (very soft)
  • ½ cup (107 g) packed light brown sugar
  • 1 tablespoon cinnamon
  • 2 large bananas (thinly sliced)
  • For the Cream Cheese Frosting: ¼ cup (60 ml) heavy cream (slightly warmed)
  • 4 ounces cream cheese (softened to room temperature)
  • 4 tablespoons (57 g) unsalted butter (softened)
  • 1 ½ cups (170 g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Combine lukewarm milk and melted butter in a mixing bowl and add sugar and yeast. Let it sit until foamy.
  2. Stir in mashed banana and gradually add flour and salt until a soft dough forms.
  3. Knead the dough on a floured surface until smooth (about 8-10 minutes), then let it rise in a greased bowl for about an hour or until doubled.
  4. Roll out the risen dough into a rectangle and spread softened butter over it.
  5. Sprinkle brown sugar and cinnamon evenly before layering sliced bananas.
  6. Roll up tightly from one edge and slice into equal pieces.
  7. Let the rolls rise again on a baking sheet for about 30 minutes before baking at 350°F for approximately 25-35 minutes.
  8. Prepare frosting while baking by mixing all frosting ingredients until smooth; frost warm rolls after baking.
