Ingredients

Scale
  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small onion (diced)
  • 4 garlic cloves (minced)
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 3 cups low-sodium beef broth
  • Salt and pepper (to taste)
  • 3 tbsp butter

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Sauté the diced onion for 3-4 minutes until softened.
  2. Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add uncooked rice, beef broth, Italian seasoning, salt, and pepper to the skillet. Stir well to combine.
  5. Bring to a boil, then reduce heat to low and cover. Cook for 18-20 minutes until rice absorbs liquid and is tender.
  6. In a small saucepan over low heat, melt the remaining butter. Stir in milk, Parmesan cheese, and cheddar cheese until smooth and creamy.
  7. Pour the cheese sauce into the skillet with beef and rice mixture; stir well to combine.
  8. Cook uncovered for an additional few minutes to meld flavors. Serve warm with optional parsley garnish.
