  • 56 medium sweet potatoes (peeled & cut into thin medallions)
  • ¼ cup unsalted butter
  • ¼ cup brown sugar (light or dark)
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice sweet potatoes into thin medallions. Arrange in a single layer in a baking dish.
  3. In a small saucepan over medium heat, combine unsalted butter, brown sugar, water, cinnamon, cloves, nutmeg, and salt. Stir until melted and smooth.
  4. Brush about three-quarters of the sauce over the sweet potato medallions. Cover with foil and bake for 45–50 minutes.
  5. Remove from the oven; drizzle remaining sauce on top. Sprinkle with pecans and vegan marshmallows.
  6. Switch oven to broil mode; broil for 1–2 minutes until marshmallows are golden brown—watch closely!
  7. Let cool for about 10–15 minutes before serving.
