  • 16 oz rotini pasta
  • 1 lb ground beef
  • Salt and pepper, to taste
  • 1/2 cup chopped dill pickles
  • 1 cup shredded iceberg lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup diced onion
  • 3/4 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tbsp yellow mustard
  • 2 tbsp pickle juice

Instructions

  1. Cook rotini pasta according to package instructions until al dente. Drain and rinse with cold water. Let cool.
  2. In a skillet over medium heat, brown ground beef until fully cooked; season with salt and pepper. Drain excess fat and cool to room temperature.
  3. In a large mixing bowl, combine cooled pasta, beef, pickles, lettuce, tomatoes, onion, and cheese.
  4. In a separate bowl, whisk together mayonnaise, ketchup, mustard, pickle juice, salt, and pepper until smooth.
  5. Pour dressing over the pasta mixture and gently toss to combine.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.
