  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by mixing cream cheese, granulated sugar, and vanilla until smooth. Set aside.
  2. In another bowl, combine granulated sugar, black cocoa powder, all-purpose flour, baking powder, and salt.
  3. Cream together softened butter, light brown sugar, and extra granulated sugar until fluffy. Add egg yolks and vanilla; mix well.
  4. Gradually add dry ingredients to the butter mixture until just combined.
  5. Preheat oven to 350°F (175°C). Scoop dough into disks and place cheesecake filling in half of them; top with remaining disks and seal edges.
  6. Bake for 12-15 minutes until edges are set but centers remain soft. Cool on a rack before serving.
