  • 34 large carrots
  • 1 Tbsp ghee or butter
  • 1/2 tsp minced fresh rosemary
  • 1/2 tsp minced fresh parsley
  • 1/4 tsp salt

Instructions

  1. Wash the carrots thoroughly and peel them lengthwise using a vegetable peeler to create ribbons. Rotate until too thin to peel.
  2. Bring about 1 inch of water to boil in a saucepan and place the carrot ribbons in a steamer basket over it. Cover and steam for about 3 minutes until crisp-tender.
  3. In a small bowl, mix ghee or butter, rosemary, parsley, and salt. Once the ribbons are steamed, toss them in the mixture to coat evenly before serving.
