  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • ¼ cup diced tomatoes

  • ¼ cup chopped cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub and dry the potatoes, then pierce them several times with a fork.
  3. Rub the potatoes with olive oil, sprinkle with salt and pepper, and bake for about 45 minutes until tender.
  4. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  5. Stir in taco seasoning according to package instructions and simmer for about 5 minutes.
  6. Once potatoes are done, let them cool slightly before slicing open and filling with beef.
  7. Top with shredded cheddar cheese and return to the oven for an additional 5 minutes until melted.
