  • ¾ cup semisweet chocolate chips
  • 1 tablespoon oil

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together butter and granulated sugar until fluffy. Mix in vanilla and egg.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add dry ingredients to wet mixture until a dough forms.
  4. Scoop tablespoons of dough onto the prepared baking sheet, spacing them apart. Bake for about 10 minutes until edges are set but centers remain soft. Cool on a wire rack.
  5. For the mint frosting, beat together softened butter and powdered icing sugar until smooth, then add milk and mint extract.
  6. Spread mint frosting over cooled cookies.
  7. Melt semisweet chocolate chips with oil in the microwave; drizzle or spread over frosted cookies.
