  • 1/4 cup granulated sugar (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • 1/4 cup cold unsalted butter, cut into small pieces (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, cinnamon, baking soda, salt, and nutmeg.
  3. In another bowl, combine sugar, oil, eggs, and vanilla extract until smooth.
  4. Mix wet ingredients into dry ingredients until just combined; avoid overmixing.
  5. Fold in grated zucchini and nuts if using.
  6. Pour batter into the pan and prepare the streusel by mixing flour, brown sugar, granulated sugar, cinnamon, and cold butter until crumbly.
