  • 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, cinnamon, baking soda, salt, and nutmeg.
  3. In another bowl, mix the sugar, vegetable oil, eggs, and vanilla until well combined.
  4. Fold the wet mixture into the dry ingredients until just combined; avoid overmixing.
  5. Gently fold in the grated zucchini.
  6. Transfer the batter into the prepared loaf pan.
  7. For the streusel topping: mix flour, brown sugar, granulated sugar, and cinnamon in a small bowl; cut in cold butter until crumbly.
