  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat oven to 350°F and prepare a 9×5-inch loaf pan.
  2. In a bowl, mix egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla extract, and spices until well combined.
  3. Gently fold in flour, baking powder, baking soda until just mixed.
  4. Pour two-thirds of the batter into the prepared pan; smooth the top.
  5. In another bowl, combine cream cheese with sugar and flour until smooth; pour over batter in the pan.
  6. Top with remaining batter and smooth it out gently.
  7. Bake for about 48 minutes or until golden brown and a toothpick inserted comes out clean.
