  • 1/2 cup diced onions
  • 1/4 cup sundried tomatoes (diced)
  • 3 garlic cloves (minced)
  • 1/4 cup flour
  • 68 cups chicken broth
  • 6 oz pasta (small shells recommended)
  • 1 cup heavy whipping cream
  • 2 1/23 cups fresh spinach
  • Grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced chicken, season with Italian seasoning, salt, and pepper. Cook until browned (about 4-5 minutes).
  2. Stir in carrots, celery, onions, sundried tomatoes, and garlic; sauté until veggies are translucent (3-4 minutes).
  3. Sprinkle flour into the mixture and stir well. If using tomato paste, add now.
  4. Gradually whisk in the chicken broth while stirring continuously to avoid lumps.
  5. Bring to a boil; add pasta along with remaining seasoning. Cover and simmer for about 20 minutes until chicken is cooked through and pasta is al dente.
  6. Stir in heavy cream, spinach, and grated Parmesan cheese; simmer for an additional 5 minutes.
  7. Taste and adjust seasoning if necessary before serving.
