  • pinch of red pepper flakes (optional)
  • 3 garlic cloves (minced)
  • 1 cup pumpkin puree
  • 1 1/2 cups heavy whipping cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground sage
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon brown sugar
  • 1/2 cup parmesan cheese (freshly grated plus extra for serving)

Instructions

  1. Cook rigatoni according to package directions until al dente; drain and set aside.
  2. In a skillet over medium heat, melt butter, sauté diced onion and optional red pepper flakes until translucent, then add minced garlic.
  3. Stir in pumpkin puree and sauté briefly before adding heavy cream; whisk until combined.
