  • 2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canola oil
  • 4 large eggs
  • 1 (15 oz) can pumpkin puree
  • 2/3 cup water
  • 1/2 cup cold butter, cubed
  • 3/4 cup all-purpose flour (for crumb topping)
  • 1/2 cup brown sugar (for crumb topping)
  • 1 tsp ground cinnamon (for crumb topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8×4-inch bread pans and line with parchment paper.
  2. In a large bowl, mix flour, baking soda, salt, and spices.
  3. Stir in granulated sugar and oil until combined. Add eggs, pumpkin puree, and mix until smooth.
  4. Divide batter between prepared pans.
  5. For crumb topping, combine flour, brown sugar, and cinnamon; cut in cold butter until crumbly. Sprinkle on top of batter.
  6. Bake for 55–65 minutes or until a toothpick inserted comes out clean.
  7. Let cool in pans for 10 minutes before transferring to wire racks.
