  • ⅔ cup starchy potato (cubed)
  • ½ tsp salt
  • ¾ cup flour
  • 2 tbsp vegan butter
  • 2 tsp sage (densely packed)

Instructions

  1. Steam or boil the cubed pumpkin until tender. Do the same with the starchy potato until soft.
  2. Drain excess water and mash both vegetables together until smooth. Add salt and gradually mix in flour until a soft dough forms.
  3. On a floured surface, divide the dough into sections, rolling each into ropes about ½ inch thick before cutting into bite-sized pieces.
  4. Boil salted water in a large pot. Add gnocchi in batches; once they float to the surface, cook for an additional minute before removing with a slotted spoon.
  5. For the sage butter, melt vegan butter in a skillet over medium heat and add chopped sage until fragrant.
  6. Toss cooked gnocchi in sage butter and serve warm.
