  • ¼ cup granulated sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ⅓ cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter, melted
  • 1 cup fresh peaches, peeled and diced
  • Vegetable oil (for frying)
  • For the glaze: 1 cup powdered sugar, 2–3 tablespoons milk or cream, ½ teaspoon vanilla extract

Instructions

  1. In a mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon until well combined.
  2. In another bowl, mix milk, egg, vanilla extract, and melted butter until smooth.
  3. Combine wet and dry ingredients just until mixed; fold in diced peaches.
  4. Heat vegetable oil in a heavy-bottomed pot to 350°F (175°C).
  5. Drop spoonfuls of batter into hot oil and fry for about 2–3 minutes per side until golden brown.
  6. Remove fritters with a slotted spoon and drain on paper towels.
  7. For the glaze, whisk powdered sugar with milk and vanilla until smooth; drizzle over warm fritters before serving.
