  • 4 large Yukon Gold Potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup fresh parsley (finely chopped)
  • 1 medium red onion (finely chopped)
  • 1/4 cup feta cheese (crumbled)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the potatoes thoroughly and cut them into approximately 1/3-inch wide sticks.
  3. Soak the potato sticks in cold water for 10 to 15 minutes to enhance crispiness. Drain and dry completely after soaking.
  4. In a large mixing bowl, toss the dried potato sticks with olive oil, salt, oregano, dill, black pepper, and garlic powder until evenly coated.
  5. Line a baking sheet with parchment paper and spread the seasoned fries in a single layer.
  6. Bake in the preheated oven for 15 minutes; then flip the fries and return them to bake for an additional 6 to 8 minutes until golden brown and crispy.
  7. Transfer the baked fries to a serving plate and top generously with parsley, red onion, and crumbled feta cheese.
  8. Serve warm with optional dips like tzatziki or aioli.
