  • 2 cups shredded zucchini (packed)
  • 1 large egg
  • ½ cup unsweetened applesauce
  • ¾ cup honey or maple syrup
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9 x 5 loaf pan with parchment paper and cooking spray.
  2. In a large bowl, whisk together the egg, applesauce, honey or maple syrup, cinnamon, baking soda, baking powder, and salt until smooth.
  3. Gently stir in the shredded zucchini until evenly mixed.
  4. Gradually add the flour while folding with a spatula until just combined—do not overmix.
  5. Pour the batter into the prepared loaf pan and bake for 50–60 minutes until a toothpick inserted comes out clean.
  6. Allow to cool in the pan for about 10 minutes before transferring to a cooling rack to cool completely.
