  • 3 cups fresh peaches (peeled and diced)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 cup sour cream or plain Greek yogurt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking pan by lining it with parchment paper or greasing it.
  2. For the crust, cream together softened butter and sugar in a mixing bowl, then mix in flour and salt until crumbly. Press into the bottom of the prepared pan.
  3. Bake for 15 minutes until lightly golden.
  4. In another bowl, combine diced peaches with sugar, lemon juice, and cornstarch.
  5. Spread the peach mixture over the pre-baked crust.
  6. For the topping, whisk together eggs, remaining sugar, sour cream, flour, and vanilla extract until smooth. Pour over the peaches.
  7. Bake for an additional 35–40 minutes until set and lightly golden on top.
  8. Cool completely before slicing into squares.
