  • 1 cup Irish barley tea
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 cup chicken broth
  • 1 tablespoon butter

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat; cook chicken for about 6-7 minutes per side until golden brown.
  3. Remove chicken; cover with foil to keep warm.
  4. In the same skillet, sauté onion for 3-4 minutes; add garlic and cook for another minute.
  5. Pour in barley tea, simmer for 5 minutes, then add chicken broth and cream; bring to a gentle simmer.
  6. Stir in Dijon mustard and thyme; simmer until sauce thickens.
