Instructions

  2. In a heavy-bottomed saucepan, combine granulated sugar, heavy cream, light corn syrup, and salt. Cook over medium heat while stirring until the sugar dissolves. Attach your candy thermometer.
  3. Stop stirring once the thermometer is attached and cook until the mixture reaches 260°F (127°C).
  4. Carefully pour the hot candy onto your prepared surface and let it cool for about 10 to 15 minutes until it's safe to handle.
  5. Butter your hands well and start pulling the candy by stretching and folding for 10 to 15 minutes until it lightens in color and becomes satiny.
  6. Shape into ropes about ½ inch thick. Use buttered scissors to cut them into bite-sized pieces. Place each piece on wax paper to firm up.
