  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme
  • 1 tablespoon olive oil (for drizzling)
  • 1 tablespoon honey
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a medium bowl, combine warm water, sugar, and active dry yeast. Let sit for about 5 minutes until frothy.
  2. In a large bowl, mix all-purpose flour and salt. Add the yeast mixture along with olive oil; stir until a dough forms.
  3. Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth. Place in an oiled bowl, cover with a towel, and let rise for 1 to 1.5 hours until doubled in size.
  4. Preheat the oven to 475°F (245°C). Prepare the cheese mixture by combining ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a small bowl.
  5. Roll out the risen dough into a thin round shape (about 12 inches). Spread the cheese mixture evenly over it and sprinkle with fresh thyme.
  6. Bake for 10-12 minutes until the crust is golden and the cheese bubbles lightly.
  7. Drizzle with olive oil and honey before serving.
