  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar
  • 1 tablespoon cinnamon

Instructions

  1. 1. Preheat your oven to 350°F and line a 9×5 loaf pan with parchment paper.
  2. 2. In a large mixing bowl, combine shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract; mix well.
  3. 3. In another bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves. Gradually add to the wet mixture until just combined.
  4. 4. Prepare the cinnamon sugar mixture by combining granulated sugar and cinnamon in a small bowl.
  5. 5. Layer half of the batter in the loaf pan followed by half of the cinnamon sugar mixture. Add remaining batter on top and finish with the rest of the cinnamon sugar. Swirl with a knife.
  6. 6. Bake for 60-65 minutes until golden brown and a toothpick comes out clean.
  7. 7. Allow to cool for 10–15 minutes before slicing.
