  1. Preheat oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Sift almond flour and powdered sugar together twice into a bowl.
  3. In another bowl, whip egg whites until foamy; gradually add granulated sugar and continue whipping until stiff peaks form.
  4. Gently fold the dry ingredients into the whipped egg whites until fully combined.
  5. Pipe small circles onto prepared baking sheets and let rest for 30 minutes until a skin forms on top.
  6. Bake for 15-18 minutes until firm yet slightly soft; cool completely.
  7. For the filling, whip heavy cream with powdered sugar and vanilla extract until fluffy, then fold in pureed peaches.
  8. Assemble by sandwiching the peach cream between two macaron shells.
