  • 1 lb boneless skinless chicken thighs (marinated)
  • 1 cup fresh pineapple (cubed)
  • 8 small tortillas (flour or corn)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp lime juice
  • Optional toppings: sliced jalapeño, diced red onion, chopped cilantro, sliced avocado

Instructions

  1. Marinate the chicken thighs in a mixing bowl with chili powder, cumin, paprika, and lime juice for at least 15 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated chicken for about 5–7 minutes on each side until cooked through. Remove from the skillet.
  3. In the same skillet, sauté cubed pineapple for about 3–4 minutes until caramelized.
  4. Warm tortillas in another skillet or over an open flame until soft.
  5. Slice the cooked chicken into bite-sized pieces and assemble tacos by adding chicken and sautéed pineapple to each tortilla.
  6. Top with diced red onion, chopped cilantro, sliced jalapeño, and avocado as desired.
