2 cups granulated sugar
3/4 cup water
1/2 cup liquid glucose (or light corn syrup)
Few drops black gel food coloring
6 Granny Smith apples (or 12 small apples)
Instructions
Prepare a baking sheet by greasing a piece of greaseproof paper and placing it on the tray.
Skewer each apple with bamboo sticks and set aside.
In a saucepan, combine sugar, water, liquid glucose, and black food coloring. Heat over medium until simmering, stirring gently to dissolve the sugar.
Stop stirring once dissolved, wash down the sides of the pot with a wet brush to prevent crystallization, and cook until reaching hard crack stage (310°F/150°C).
Dip each apple into the caramel mixture, swirling to coat evenly.
Place dipped apples on the prepared baking sheet and allow to cool completely before serving.
