  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • ¼ teaspoon fine salt
  • 1 cup pumpkin puree
  • 1 cup milk of choice
  • 2 large eggs
  • ⅓ cup pure maple syrup or honey
  • ¼ cup unsalted butter or coconut oil, melted
  • 2 teaspoons pure vanilla extract
  • ½ cup chopped pecans, toasted

Instructions

  1. Preheat your oven to 375°F and grease a 9×9-inch baking dish.
  2. In a large bowl, mix together the rolled oats, pumpkin pie spice, baking powder, and salt.
  3. In another bowl, whisk together the pumpkin puree, milk, eggs, maple syrup, melted butter or oil, and vanilla extract until smooth.
  4. Combine the wet ingredients with the dry ingredients until well mixed.
  5. Pour the batter into the prepared baking dish and sprinkle with additional pecans if desired.
  6. Bake for 30–34 minutes until set; a toothpick inserted should come out clean.
  7. Allow to cool for 5 minutes before slicing into squares and serving warm.
