  • 115 g cream cheese (full-fat)
  • 2 tbsp granulated sugar
  • 1/2 tsp vanilla extract
  • 110 g butter
  • 100 g granulated sugar
  • 100 g dark brown sugar
  • 120 g pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 240 g all-purpose flour
  • 2 tsp ground cinnamon
  • 1/4 tsp ground allspice powder
  • 1/4 tsp ground nutmeg powder
  • 1/4 tsp ground ginger powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 50 g granulated sugar
  • 1 tsp ground cinnamon
  • ⅛ tsp ground allspice
  • ⅛ tsp ground nutmeg
  • ⅛ tsp ground ginger

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, mix cream cheese with granulated sugar and vanilla extract until smooth for the filling.
  3. In another bowl, beat butter with both sugars until fluffy. Mix in pumpkin puree, egg, and vanilla until well combined.
  4. In a separate bowl, whisk together flour and spices. Gradually fold into the wet mixture until just combined.
  5. Scoop dough portions and flatten them. Place about one teaspoon of cheesecake filling in the center and wrap the dough around it to form balls.
  6. Roll each cookie ball in a mixture of sugar and spices before placing them on the baking sheet.
  7. Bake for 12 minutes or until lightly golden around the edges. Cool on wire racks.
