  • 1/2 cup pumpkin puree
  • 1/4 cup + 1 tablespoon milk (room temperature)
  • 1/4 cup unsalted butter (melted and cooled)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
  2. In a medium bowl, sift together all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, and spices.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla until well combined.
  4. Gradually add wet ingredients to dry ingredients; stir gently until just combined.
  5. Spread batter evenly in the greased casserole dish.
  6. In a small bowl, mix granulated sugar, brown sugar, cinnamon, and chopped pecans. Sprinkle over the batter.
  7. Carefully pour hot water over the topping without stirring.
  8. Bake for 40 minutes or until set in the center. Allow to cool slightly before serving.
