  • 3 oz cream cheese
  • 12 tablespoons unsalted butter
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ⅓ cup coarse sugar for rolling
  • 1 large egg
  • ¼ cup brown sugar
  • Pinch table salt
  • ½ teaspoon pumpkin spice
  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and line a cookie sheet with parchment paper.
  2. In a mixing bowl, beat cream cheese and butter until smooth. Add granulated sugar and brown sugar until well combined, then mix in egg yolk and vanilla extract.
  3. In another bowl, whisk together flour, pumpkin spice, and salt. Gradually add to the wet mixture until combined.
  4. Roll dough into balls, coat in coarse sugar, and arrange on the prepared cookie sheet.
  5. In a separate bowl, whisk together the egg, brown sugar, pinch of salt, pumpkin spice, milk, pumpkin puree, and vanilla extract for the filling.
  6. Make an indentation in each dough ball and fill it with the pumpkin mixture.
  7. Bake for about 15 minutes until edges are golden. Allow cooling on a wire rack.
