  • ½ teaspoon salt

  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  2. In a bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until combined.
  3. Press half of the crumble mixture into the baking dish.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crumble base and spread evenly.
  6. Sprinkle the remaining crumble on top and add walnuts if desired.
  7. Bake for 30-35 minutes or until golden brown. Cool completely before slicing.
