Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix melted butter, pumpkin puree, sugar, egg, and vanilla until smooth.
  3. Gradually add flour, pumpkin pie spice, baking powder, and salt; mix until combined.
  4. Chill the dough for 25 minutes.
  5. Roll into balls (1½ to 2 tablespoons each) and place on a parchment-lined baking sheet.
  6. Bake for 18 minutes until lightly golden but still soft.
  7. For the frosting: beat softened cream cheese and butter; gradually add powdered sugar and vanilla until smooth. Chill until ready to use.
