Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy.
  3. Mix in pumpkin puree, egg yolk, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, salt, and spices.

  6. Scoop dough onto prepared baking sheets spacing evenly.
  7. Bake for 10–12 minutes until edges are set; cool on wire racks.
  8. For frosting, beat cream cheese and butter until smooth; mix in powdered sugar and vanilla until fluffy.
  9. Once cookies are cool, frost generously and serve.
