  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 large carrot, diced
  • 4 cups vegetable broth
  • 1 cup quinoa, rinsed
  • 2 cups fresh or frozen corn kernels
  • 1 can (14.5 oz) coconut milk
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion, minced garlic, diced celery, and carrot for 5-7 minutes until softened.
  2. Add vegetable broth and bring to a gentle boil. Stir in rinsed quinoa and reduce heat to low. Cover and simmer for 15 minutes.
  3. Incorporate corn kernels and coconut milk into the pot. Season with smoked paprika, dried thyme, salt, and pepper. Simmer uncovered for another 5-10 minutes until heated through.
  4. Serve warm in bowls garnished with fresh parsley.
