- 1 cup shredded Swiss cheese
- 3/4 cup sauerkraut, drained and squeezed dry
- 4 ounces cream cheese, softened
- 1/2 cup rye breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Oil for frying (vegetable or canola)
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon pickle relish
- 1 teaspoon hot sauce
- 1/4 teaspoon garlic powder
- 1 tablespoon chopped fresh parsley (optional)
- In a mixing bowl, combine chopped corned beef, Swiss cheese, drained sauerkraut, and softened cream cheese until well mixed.
- Chill the mixture in the refrigerator for 20-30 minutes.
- Form tablespoon-sized balls from the chilled mixture.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mix of rye and panko breadcrumbs.
- Coat each ball first in flour, then dip in egg, and finally roll in breadcrumbs.
- Heat oil in a heavy pan to 350°F (175°C) and fry the balls for about 3-4 minutes until golden brown.
- Drain on paper towels and prepare the dipping sauce by mixing mayonnaise, ketchup, pickle relish, hot sauce, and garlic powder.
