  • 1 bunch asparagus, trimmed
  • 1 bunch radishes, halved
  • 4 tablespoons olive oil (2 for veggies, 1/4 cup for vinaigrette)
  • Salt and pepper to taste
  • 2 tablespoons whole grain mustard
  • 1 tablespoon Dijon mustard
  • 2 tablespoons red apple vinegar
  • 1 garlic clove, minced
  • Optional: 1 teaspoon honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place trimmed asparagus and halved radishes on a baking sheet. Toss with 2 tablespoons of olive oil, salt, and pepper.
  3. Roast for 20–25 minutes until tender and browned, turning once.
  4. In a mixing bowl, whisk together whole grain mustard, Dijon mustard, vinegar, minced garlic, remaining olive oil, and honey (if using). Season with salt and pepper.
