  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 1/2 cup breadcrumbs (or almond flour for gluten-free)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp lemon zest
  • Salt and black pepper, to taste
  • 2 tbsp olive oil (for grilling)
  • 1 ripe avocado
  • 1/4 cup Greek yogurt
  • 2 tbsp lime juice

Instructions

  1. In a food processor, combine salmon, parsley, cilantro, and garlic; pulse until finely chopped.
  2. Transfer to a mixing bowl and add breadcrumbs, egg, smoked paprika, lemon zest, salt, and pepper. Mix until well combined.
  3. Form small balls (about 2 inches in diameter) from the mixture and place on a tray.
