  • 15 oz Libby's Pumpkin Puree
  • 2 cups All-Purpose Flour
  • 1½ cups White Sugar
  • 1 cup Butter (softened)
  • 4 Large Eggs
  • 1 tsp Baking Soda
  • 2 tsp Baking Powder
  • 2 tsp Ground Cinnamon
  • 1 tsp Pumpkin Pie Spice
  • ½ tsp Salt
  • 5 cups Confectioners' Sugar
  • 8 oz Cream Cheese (softened)
  • ¼ cup Butter (softened)
  • 1 tsp Pure Vanilla Extract

Instructions

  1. Preheat your oven to 350°F. Line a half-sheet baking pan with parchment paper and spray it lightly with cooking spray.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, sift together flour, salt, cinnamon, baking soda, and baking powder. Gradually mix the dry ingredients into the wet mixture, then fold in the pumpkin puree.
  4. Pour the batter into the prepared pan and bake for 20–25 minutes or until a toothpick comes out clean.
  5. While baking, prepare the cream cheese frosting by blending softened cream cheese and butter with confectioners' sugar and vanilla until smooth.
