Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 teaspoon kosher salt
  • 1 cup cold unsalted butter, cubed
  • 1/4 cup ice water
  • 1 pound fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • Juice from 1/2 lemon
  • 1 cup confectioners' sugar
  • 1 tablespoon milk
  • Rainbow sprinkles

Instructions

  1. Prepare the Dough: In a large bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly. Gradually add ice water until dough holds together. Divide into two discs, wrap in plastic, and refrigerate for at least 30 minutes.
  2. Make the Filling: Combine sliced strawberries, granulated sugar, cornstarch, pinch of salt, and lemon juice in another bowl. Mix well.
  3. Roll Out Dough: Preheat oven to 375°F (190°C). Roll out one dough disc into a rectangle that fits your baking sheet and transfer it onto the sheet.
  4. Assemble the Pie: Spread strawberry filling over the dough. Roll out the second disc and place over the filling. Seal edges and cut slits in the top crust.
  5. Bake: Bake for 25–30 minutes until golden brown. Cool completely before glazing.
  6. Prepare Glaze: Whisk confectioners' sugar, milk, and vanilla until smooth; drizzle over cooled pie and top with sprinkles.
