  • 3 ancho peppers
  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cut into bite-sized cubes)
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2.5 cups water

Instructions

  1. Toast the dried peppers in a dry pan for about one to two minutes per side until fragrant.
  2. Remove stems and seeds from the toasted peppers, then soak them in hot water for 20 minutes until soft.
  3. Blend soaked peppers with some soaking water and salt in a food processor until smooth; set aside.
  4. Season beef with cumin, salt, and pepper in a bowl; coat well.
  5. Heat olive oil in a large pot over medium-high heat; sear seasoned beef for about 6-7 minutes until browned.
  6. In the same pot, add chopped onions, jalapenos, and cook for around five minutes until softened.
  7. Stir in garlic; cook for an additional minute.
  8. Return seared beef to the pot along with reserved chili paste; cook for another 2-3 minutes.
  9. Add beef stock, water, and brown sugar; bring to a boil.
  10. Reduce heat, cover, and simmer for about 2 hours, stirring occasionally.
